When preparing your dinner we all know for Easter the main dish is usually ham! What about the sides? Let’s try a side using potatoes! That always seems to be a hit. This seems to be an easy dish that everyone can enjoy. For this cheesy potato bake you will need these ingredients:

  • 1 package of frozen hash brown potatoes, partially thawed
  • 1 (16 oz) container of sour cream
  • 3 cups of shredded Colby cheese or Monterey Jack cheese
  • 1/2 cup of finely chopped onions
  • 1 (10 oz) can cream of celery
  • salt and pepper, to taste

Mix potatoes, sour cream, 2 cups of cheese, onions and cream of celery in large mixing bowl. Spread into a 9×13 inch greased casserole dish. Bake, uncovered, at 350 degrees for 45 minutes, remove from the oven and sprinkle remaining cheese on top. Bake for 15 minutes longer.

This recipe serves about 12 people. If you prefer you can use one 10 oz can of cream of chicken soup instead of cream of celery.
